The Dark Cloud of Cancer

Twenty one years ago my wife’s mother died at the young age of fifty six. Cancer quickly took Becky’s best friend and her main support away. It all seemed so unfair and cruel. We certainly questioned God and His divine plan. Her Mother, however, had out lived the other members of her family (Mother, father, sister) who all had died young from the ravages of cancer. This dark cloud has stalked us ever since. For twenty on years the fear of cancer and death was a real threat. We always worried that my wife would also become a victim. As each year passed, especially fifty six which was the milestone year, we were thankful, yet the black shadow always lingered close. My wife’s youngest sister was stricken with cancer in her early thirty’s and survived with prayer, love and after the long treatment process .  Recently she was diagnosed with another, different, cancer so the family cancer fear manifested itself with an even greater vengeance and overwhelmed all. The lurking threat became ever present especially as her sister discovered that she carried an inherited cancer gene referred to as Lynch Syndrome.  Those who have a parent or sibling with this gene have a high probability, of carrying the gene, passing it to offspring and have a very high (80%) chance of having one of the cancers directly associated with Lynch Syndrome.  Especially vulnerable are females who have a greater number and types of cancer. Once Lynch was discovered in the family everyone knew that they must be tested since if the gene was present it would require some very specific testing for the early detection of the almost enviable cancers. So the testing began and darkness suffocated all we did until we would receive the results of genetic testing.
It is like waiting one’s entire life and no matter what the answer, it would be a life altering revelation. It was difficult to relax, trust God or even pray. Helplessness maybe hopelessness was our general state of being. Almost an acceptance of what we expected to be the enviable life adjustments to detect early stages of cancer. We could only pray Hail Mary’s and to her Mother who was just beyond the walls of this life in the next room speaking with us about calm and understanding of God’s will.
We left for two days of a winery B&B experience in order to fortify ourselves for my East Coast position, which of course added much additional stress and uncertainty,  and the results of the genetic test. Upon returning home we received an unexpected call informing us that the geneticist wanted to meet with us the next morning. Every black fear that we had encountered along this journey now surrounded and tormented us. We gasped for air yet found little relief or positives in this sudden call. In was another sleepless night. Having trusted our lives and every situation to the Lord we had faith that whatever fears were realized, would occur for some mysterious reason and we trusted the Lord that He could sustain us in our darkest hour even if we never understood why.
The night before  we attended our final Lenten Bible Study where the theme for the evening as well as most of the study was about trusting God, which appeared to be strengthening us for our future adversities.
We went quite early for our 9 A.M. appointment and waited sullenly and in silence for our summoning. When the geneticist called us into her office we walked in quite a daze down the hallways. This was the moment that we never expected in twenty one years. We would find out if my wife and potentially all of our offspring carried the deadly gene. The geneticist had a slight smile that every person in a cancer ward appeared to possess so as to assist in creating a hopeful and positive attitude. We sat next to each other, hand in hand awaiting relief from the numbness just to know our fate. Very quickly the geneticist pulled a large stack of papers and looked us in the eye saying “your results are negative, there is no (deadly)  gene present”. Tears of happiness flowed as we just sat stunned and a lifetime of worry dissipated slowly providing us with the fragrance and spirit of new life. A life redeemed. A life reborn.
The only thing we could do was smile and weep for deep joy.
Twice before God has worked unexpected miracles in seemingly hopeless situation with answers that we couldn’t even pray for. Luke Thomas and Hope births were truly demonstrations of the Lord’s miraculous power in desperate birth situations. In both of these cases we could only pray for His will and our understanding in seemingly hopeless situations yet He provided remarkable physical healings and their lives are constant reminders to us of His love and power.
God’s spirit was present as we walked back to our car holding each other closely knowing that my life, my treasure , my best friend, had been restored unblemished. I don’t know why some people have the gene and some don’t but at that moment all I knew that I was the most grateful man alive and the luckiest person to feel my wife’s  total relief as we held each other tight.

TeamSawyer in Kitchen Stadium competing on Iron Chef America

Iron Chef
It was an amazing experience to have witnessed a most exciting Iron Chef battle between the culinary Ninja TeamSawyer, (Sawyer, Seeholzer & Goodman) representing The Greenhouse Tavern vs  the newest Iron Chef Zakarian, in his first battle, and The Next  Iron Chef  contestant Alex Guarneschelli.
I was at the original taping and watched the airing at the party in The Greenhouse Tavern last night. I was interested to see how the editing was done and how it would be presented. Of course I am not a bystander but have a Father’s view concerning  the entire process.
The Energy, Passion, Pride and atmosphere of fun that is the hallmark of anything TeamSawyer does certainly could be felt and was very well represented in the episode. They just work like crazy Jedi Warriors, chatter relentlessly and have great fun while preparing amazing dishes. They cooked at a dizzying pace for one hour. I think an extraordinary energy level (as well as an abundance of tattoos) are prerequisite’s for TeamSawyer. It is as exciting watching them every day in the kitchen as it was watching them on Iron Chef.  What they are able to accomplish in brief periods of time is stunning ( made cheese in 1 hour! A first in Kitchen Stadium). Being at the Greenhouse Tavern last night was like being at a Rock concert in the mosh pit ( apologies to Chef BR). Exhausting, Exciting, and an Exceptionally Enjoyable time.
Now my comments. I had the same feeling as when Roy Jones Jr landed 86 punches to 32 of his Korean opponent at the Seoul Olympics only to astonishingly see the Gold Metal victory awarded to his opponent (after the match the South Korean boxer apologized because he knew Roy won). But that is how it works in the Olympic judging events, Show Biz & even Life. You don’t win all you deserve. Last night was like the viewing the Rolling Stones vs Perry Como ( do people still know who Perry is?).  The contrast was great like a manicured lawn maintained by British caretakers to  free range wild pioneer prairies lived on by energetic adventures, or like watching Kill Bill vs watching The English Patient.
A few insights:
First Course- TeamSawyer’s trio of highly creative ( the Che’vre Goat Salad w Sausage, Zuccinin Mint Fritters & Mint Poached Ohio Sweet Corn  vs raw vegetables & dip that my grandson could make with a nice cocktail from Alex. When one judge said “perfect”  when tasting raw vegetables I knew that the Jedi masters would not win. (I do like raw veggies but never considered them IC worthy no matter how tasty a side of dip was).
Main Course- Oxtail with marrow & mint vs Duck that the nicest thing the judges could say was that it should have “only been looked at” because it was not editable (and they left the course on their plates at the taping).
Judge comments during taping “ we like dessert and drinks” (is that really what Iron Chef is?)

When one judge who, during the taping, kept referring to ICJZ as “Jeffery” said “ I’m sorry but Jeffery is my drinking buddy”.  In the Olympics or at Iron Chef I guess judges do not recuse themselves.
I sat in a place where I could see all the camera shots on video screens and not only were they overwhelmingly of TeamSawyer but all Alton Brown talked about was how creative and unique their dishes were.. So getting edged out in points in creativity and taste was quite “curious”. This also was how the show portrayed the contest as most of ICJZ shots were of Alex making a teal colored cocktail The editing was excellent and did convey the feeling of the event most accurately and the comments were obviously accurate but like any quote if time allowed all of the comments would have been great to hear.
During the tasting not one piece of TeamSawyer’s dishes were left on the plates & they wanted more of the Fish Pie in a wonderful broth of Hake under a  puff pastry and the braised oxtail . They raved on about both.
I certainly will state that I am certain that all of Iron Chef Zakarian’s dishes except for the main course Duck were very delious but mostly the mint was a side add and not part of the process but that may have made it more noticeable. I believe his langostinos were a great tasting dish but shrimp cooked in mint is something I do at home.
At the taping and before I knew the results, I wrote my scores based on what I perceived from the judges comments yet knew how it would shake out. So here is my scores: 51- 45 TeamSawyer or 51-48 (my score card 9/6 taste, 4/5 use, 4/5 plating- TeamS  ICJZ respectively). However I was aware that these scores would not be reflected in the “final tally”.I may have missed something but I have reviewed my original notes and watched the episode 4 times and my conclusions are mostly the same.
So the lesson is – be passionate & love what you are doing, work insanely hard & have great fun competing. All else is a bonus. I am very proud of the work energy & ethic that was portrayed and all the positive Cleveland PR. Jon loves Cleveland & has a most outstanding team. This clearly came through. Ask yourself- what would you rather taste and on whose team would you rather work. TeamSawyer is the real winner in my mind. I must say one other thing that I also state when someone asks since it reflects my views on life and priorities:
“ Jonathon is a great chef but and even better father, husband and son”.

Marriage Reflections, Retreat, and Hocking Hill

Marriage  Reflections:
Marriage is a blessed sacrament, ordained by God, between a man and a woman. Two people truly become one as they discard their old selfish and independent ways and becomes one being united in selflessness and sacrifice.  Successful marriages are the gift that we give back to God .
Although God blesses and sanctifies the holy union, like salvation we are required to put effort into what can be the most beautiful and blessed experience. The Lord  wants us to grow in our oneness as husband and wife. This requires continual self-examination and hard work.  In life’s endeavors one receives the benefits equal to the efforts expended yet in marriage God multiplies your contributions much greater than any worldly investment and produces true riches that never perish.
One of my observations is that strong marriages, those where the couples appear to really enjoy their life together and possess inner contentment, are those who share special moments and activities and have heavily invested in developing mutual interests and enjoyments. This usually begins with establishing positive and uninhibited communications. Which leads us to our Marriage Retreat to Hocking Hills.

Why go to Hocking Hills for a Retreat?
We go on marriage retreats to experience the joy of just being. To experience each other without all the distractions of life. It seems to me that one of the great gospel lessons is to stay focused on the one true goal. To eliminate all of the deadlines, pressures, and life requirements by retreating to a place where there is no agenda is how  we personally strengthen our mutual enjoyments in an atmosphere of stillness and nature.
People ask us “What do you do.” The answer is “not much” except be together without any plans or agenda. The only thing that we must do is eat when we are hungry, and walk the dogs. There is no cell or web access. We do not drive to get a paper while listening to the news.  The television does have cable so there may be a few rare moments when we just check to see if there was any great news but mostly we are “entertained” by soft classical music and at this time it is all Christmas classics. Mostly we are isolated from civilization and enjoy just being together with nothing planned. We are secluded in a natural wood cabin deep in the woods where we spend most of the time reading, writing, and cooking together. We have some gentle communication as topics occur and share what we have read or were pondering.
We may watch a movie, usually an old film noir, or relax at night in the hot tub. The day passes slowly and every moment if full a simple pleasure. We take the dogs on one or two hikes each day, dine on spectacular meals, and generally cleanse our minds of stress and worry. We can enjoy each other apart from all the issues of life. These times better equip us to remain one when confronted with daily challenges. Time disappears and even the day becomes vague as we seek to become lost in the moments of living.
We make measured progress in absorbing and discussions from the massive stacks of books that we have brought with us. Since we have no set agenda yet deep inside we hope to finish one book and many short writings and make good progress on many others. One of our favorite past times is to each read the same short story or essay and share our comments with each other in our personal study group. It is not just relaxing but more like the simplicity and beauty of Thoreau’s Walden Pond . Living in the moment to appreciate the grandness of life. To wander among one’s thoughts and creative urges while belonging to a timelessness that is captured by a falling snowflake, a cold Winter breeze, a warm glow from the fireplace while reading beautiful  French poetry or dining on an elegant meal of truffles with scrambled egg and wine. Uniting with nature and simplicity of life, in a cabin retreat, is linkage to a timeless past. Every age has had people who valued the terrible beauty and grandeur of nature in a relatively unrestricted state.
Boring? Maybe to some but to us it is glorious!

Our Dogs: A Continuing Saga of Exciting & Interesting Experiences

Grizzly : Cole Gets another Nickname

Everyone who meets our dog Cole has a different impression of what he resembles and what breed he may be.  The funny thing is that almost every comparison that we have heard appears or at least could be correct. Since he was supposed to be a miniature schnauzer but has grown into an 85 pound giant shaggy puppy we obviously do not know his heritage. People have said he was a Black Labrador, A Giant Schnauzer, A Black Labradoodle, A Irish Wolf hound, and combinations of all those breeds. He does appear to be a mix of all of the above. People have also told us that he reminds them of a large black Grover from Sesame Street, a long limbed black monkey, a drunken sailor who flails arms & legs before collapsing into a deep sleep, Cole the Big Black Dog (like Clifford the big red dog), a hairy black sock puppet, a black stallion, a lump of a dog, a big dust mop, or in my case Huck Finn (Tom Sawyer’s best friend). One new comparison however occurs when something of special interest is in the distance like we experienced on a recent walk in the Hills of Hocking. We were on a lovely hiking path which usually heightens Coles sensitivity to his environment and he nervously runs from side to side sniffing everything and touching trees, moss, stay leaves, fallen twigs and everything else of interest with his big black nose. All of a sudden he must have sensed something of great excitement in the distance through the dense yet barren trees. Cole raised himself on two legs as if he was a giant Grizzly Bear sneering at some intruder before combat begins. He held that pose, standing tall on two legs, peering deep in the woods, ready for any required action. Perfectly balanced like a warrior captured in a great painting .This alerted his brother, Bart, who cannot stand on his powerful hunches and appeared jealous, annoyed, but in a nervous frenzy sensing something could require his involvement. As Cole stood straight up he is an imposing height of almost six feet . The amazing aspect of Cole rearing up on his hind legs is that he not only can hold the stance but actually walks a few steps, on two legs, in order to get an even better look.  Cole had used this stance a few times before but deep in the forest he certainly deserved Grizzly to be added to his long list of nicknames. *of course I am unable to get a photo as I never know when he is going to do this and he refuses to do on command, actually he does very little on commend.

Cole’s Facial Expressions:
There is something just irresistible about the usual expression and countenance exhibited by my furry friend Cole the big black lump of a dog. His normal position is seated directly in front of me wherever I am and he moves as I do. Sitting with his hind legs folded beneath his big body and his long front legs stretched out in front of him. His head is raised with those round black eyes looking right into mine or waiting for me to look at him. His expression is that of a three year old looking up into Santa’s eyes on his lap for the first time. It is a look of wide-eyed complete trust, dependency, helplessness,  bewilderment  ,or patiently waiting for instructions and guidance as if asking  “what should I do for you now”.  He does not wine, bark or generally annoy me but stares at me wondering what comes next. He may wants me to say “walk, “treat” “out” or “give Daddy a kiss” at which time he puts his wet black nose on mine and gives me a gentle lick as if to say “Thanks for everything, Dad”. How can I ever be mad at this lovable companion with this simple look usually on his face?  It takes great effort not to spoil him, too much. I knew that I had gone too far when my wife said to me “Tom, you don’t have to apologize to the dog for making him get off your chair.
Insights: Overheard Conversation between two adopted brothers- Cole and Bart

Bart “Let’s go see what Mom & Dad are doing.”
Cole “huh?”
Bart “Get up! Let’s go see what Mom & Dad are doing.”
Cole “What, Where do you want to go? I’m resting comfortably.”
Bart “Com’on let’s go, time to move, you big slow lug, get that lazy butt going or if there are treats to eat you won’t get any.”
Cole” What kind of treats”
Bart “ I don’t know but Mom always has treats.”
Cole “Ok I am right behind you”
Bart “Look out the window, I think I see Dad, let’s go outside, no that’s not Dad but something is moving out there that should be investigated” “ Hey look that door is closed, is Dad in there?” “Let’s find out.”
Cole “I thought we were going for treats”
Bart “Oh yeah, latter”, “What the hey, no one is in here” “Is Dad away or hiding from us”
“Let’s check the other room” “Look out this window, I think I see Dad, no that is a Deer, A DEER COLE QUICK TELL MOM!, COLE A DEER, A DEER, I THINK HE IS POPPING  IN OUR YARD!”
Cole “WHERE IS THE DEER? I DON’T SEE HIM! ARE YOU SURE?”
Bart “DON’T YELL AT ME YOU BIG LAZY THING, I’LL BEAT YOU BUTT”
COLE “OH YEAH, LET’S SEE WHO IS THE LITTE BABY BROTHER.”
BART “ I’M OLDER THAT YOU ARE AND EVEN THOUGH I’M SMALLER I AM A MUCH BETTER FIGHTER.”
COLE “ LET’S SEE HOW STRONG YOU ARE YOU LITTLE ANT.”
BART “ OK THAT’S IT, I AM GOING TO SHOW YOU THAT THIS LITTLE ANT CAN WHIP SOME BIG WORM.”
Bart “HEY LOOK,  HE’S GONE NOW, I SCARED HIM OFF.  Cole, WOULN’T YOU LIKE TO CATCH HIM? I WOULD. WILL DAD LET ME OUTSIDE? I THINK HE WILL. I HOPE HE WILL”
Cole “ Bart,Let’s get those treats you told me about”
Bart “OK, Where did I say Mom was? Oh yeah, in the kitchen.”
Bart “Hey there is the door, maybe we can go out and look for that Deer.” “Why are you sitting at the table?”
Cole “ I want that treat, and Dad usually gives me something good when I behave like this and not jump around like a lunatic. I don’t mean to cast aspersions but you are quite hyperactive and run around like that kid Catcher looking for chocolate.”
Bart “Cole you big dummy, Mom isn’t even in here so you won’t get any treat.”
Cole “ If you don’t stop acting like some wild animal Mom will put you on that thing  that makes you run but you don’t go anywhere”.
Cole “Well I think I will just lay down and rest now.”
Bart “Well I’m going to run and find Mom or Dad. I’ll let you know when I locate them. I’ll call out to you and you can come but I’m not going to sit still when there are many things we don’t know. Once Mom and Dad go into their reading & snoozing chairs we can rest but until then the search and actions for attention are on”
Cole “Whatever.”

Becky and her "Bumpus Dog" Experience

In true Thanksgiving Spirit Becky experienced her personal  version of that great scene from A Christmas Story where the Bumpus’ dogs steal the turkey. Following Thanksgiving dinner, and prior to the annual viewing of “A Christmas Story”, Becky was enjoying the fruit of her labor from the wonderful Thanksgiving feast while comfortably seated , just off the kitchen, in the den.  She was watching  her grandchildren busily making Thanksgiving bags while feasting on the very best part of the bird that had saved for her special enjoyment. It was the beautifully browned caramelized  Turkey wing. She sat with each hand holding an end of the wing, like she was about to delicately eat corn on the cob and slowly savor the deliciousness of each bite.  This was to be a well deserved reward for all her culinary production.
Bart, our adopted stray, sat nearby looking like the street urchin dog from his previous life before we welcomed him into our home two years ago. Since Bart is a Beagle, he has some traits that are just inbred  parts of his personality that we accept and understand as Bart being Bart. He proudly announces the presence of any moving object to come within sight or hearing  range and will alert the entire neighborhood that he has spotted the enemy which is usually in the form of a car, a deer, a person walking. He also will snatch food left unattended or held at low levels by one of the many grandchildren who have learned to eat at the table and not leave food unguarded. The sight of that Turkey wing must have been overpowering because any sense of decorum or behavioral restraint that he had learned was quickly discarded as Bart jumped like an attacking Warg-wolf, ridden by the evil Orcs, from Lord of the Rings and locked his teeth onto the wing. He was able to perfectly clench his jaws between Becky’s hands on the now disputed prize.
A great battle ensued for this treasure with neither opponent willing to give an inch. Each combatant held fast while the great tug of war intensified. With all their might each tried to pull the tasty treat away from their foe. Like two great gladiator’s locked in a death match they fought on.  Their wills and strength were equal and the Turkey Wing was suspended between their straining bodies . They stared into each other’s eyes  as if the threat of death could be visually  conveyed, the spectators like the crowds at the Roman Coliseum were mesmerized by the classic conflict. Simultaneously we all cheered for our champion, Becky, to emerge victorious with shouts of advice. Finally she exclaimed, in frustration with a brilliant, although not legal in the truest sense of gladiator conduct, for Tom to hit Bart on the head which she hoped would startle him to release his vice like grip. This maneuver worked as intended and the startled Bart flinched which allowed Becky to quickly stand up still gripping her prize between her hands.
Her smirk of satisfied victory chilled the air and as if to gloat further over her vanquished foe as she finished eating her cherished delicacy while the humiliated Bart sloutched off searching for weaker victims with low hanging food stuff while still pondering the treat that got away.
It was a riotous moment for the cheering throngs who celebrated a victory over the usual champion “Bumpus dog” Bart.

Things I learned from my dog Cole

Things my Dog Cole has taught me:
Never pass up an opportunity for a nap
If you see another dog chewing on something it is probably very tasty so grab it and run
When you sit, wag tail, stick out your tongue, so you look cute and good things happen even it is just a pat on the head
Anyone will rub your belly if you roll on your back.
People who smell bad are usually bad people
Begging works
Strange dogs can’t be trusted until they pass the sniff test
When a door is shut- keep scratching until someone opens it
When someone is mad at you do something cute to make them laugh
All food at low levels is yours
Eat fast so they think you need more food
If it moves- chase it
Annoying barking works to get your way
Before going outside be prepared by drinking all available water
Sit on the laps of those who feed you know matter how big you are
Never trust a cat, they are sneaks
Licking oneself is embarrassing but better than not licking
Couches are made for jumping, sleeping, and looking out windows
Never go out in the rain, you will smell  bad be constant shaking still won’t get you dry
Don’t step in it and if you do just pretend you don’t know
All deer are evil and deserve to be killed, same for squirrels, moles, actually too many things to list
Never look up when eating since someone will steal your food
Be certain they are saying tutor and not neuter when going in car
If you can, run fast, and never look back or stop
Wind in one’s face feels better than almost anything
If it itches scratch it, if it still itches keep scratching until it bleeds
If you kill it, shake it until it falls apart
Everyone hates a wet nose on cold days
White Snow only hides lots of doggie doo but it never goes away
If it runs from you chase it
Tails always involuntarily  reveal how you feel
Always be someone’s best friend

Tom Sawyer and his dog- Cole

Tom Sawyer and his dog - Cole
I was very reluctant to adopt another pet yet I understood my wife’s need for a small dog after the passing of her favorite pet, a small Welch Corgi named Biscuit, so I agreed to take her to a rescue and look at a Miniature Schnauzer puppy. We drove for over an hour into small town America to arrive at a residence that looked quite worn, as many small town dwellings appear. Two guys who ,from their appearance, could have been on parole, led us into the “living room” which was lined with cages from floor to ceiling with puppies that they said they had rescued and for a small fee we could help save a discarded animal. We had come to see a liter of seven miniature Schnauzers that were advertised on line. Our intent was to take home a little female. Certainly we had great apprehension based on the surroundings but once the cage was open and the puppies ran out our decision was affirmed and it was only a matter of which female we would take home. They were all so cute but one ran over to me immediately and reminiscent to how we got our first puppy for Jeremiah when he was only three the one that jumped up in his lap and licked his face which was obviously the one that would be selected. At that time he said “this one is pokie” so the name stuck and we had a wonderful pet. The brother of the, cute but somewhat shy, girls jumped up in my lap and would not stop playing his puppy games with me so he actually chose me and we both willingly took him home to become part of the family.
We surveyed our children and Grandchildren for a name and the mutually agreed upon his name of Cole (Coal) since he was all black with a few small strands of Schnauzer gray starting to emerge. He became part of the family and grew on us as his body grew, and grew, and grew. He just kept on growing. Soon we realized that he could not be a miniature Schnauzer but some type of mixed breed. We bought larger dog cages , three times, as he kept growing. The veterinarian thought that he was part black Labrador retriever. He also resembles a black Labra-doodle. His appearance now reminds many of an Irish Wolfhound and from what I have read and the images that I have seen it does appear to me that this may indeed be his heritage. So I have concluded that he is a great big Schnazadore  wolf hound
Whatever his lineage, he a big lovable, clumsy, friendly, endearing lump of a dog. He has become my very best friend. He is not a pet but a true companion.  His appearance reminds one of Clifford the Big Red Dog except he is Cole the big black dog. He has those long floppy ears that fly up in the air when he runs down the stairs to go outdoors. His long tail bends skyward when he is happy, which is most of the time,  and it knocks things off shelves as he whirls his long body around in one of his many excitable moments. His tail becomes an inadvertent weapon much like an uncontrollable  Indiana Jones’ bullwhip or the tail of an alligator lashing at things with a mighty force.  Cole’s paws are huge and sometimes when he is sleeping next to me he puts his leg over my head and it feels as if someone just punched me. When he stands on his two legs, which he does when he wishes to see over something or when chasing a bug as he will rise up on his back legs to extend his range and snag that flying insect, he looks like The Biggest Bear and stands over almost 6 feet tall. If he hasn’t seen me in awhile he will stand up on his hind legs, put his front paws on my shoulders and plant a big wet Cole kiss on my face. Cole has a big shaggy beard that serves to collect much water when he drinks that he drips everywhere he lumbers. It also can collect grass, dust, burrs and an assortment of small particles that require some attention. Cole’s face has the appearance of inquisitiveness as if he is in a constant state of “ wondering what is going on”.  He perpetually has that quizzical look on his face. He looks quite happy with his floppy ears, big black sad eyes and always present pink tongue either slightly protruding or side- hanging after a long walk or time of great excitement. Cole gets very excited to the point of frenzy whenever something “big” is going on like the presence of another dog or an outing in the car. Coles bark resembles some distant ancestral warning to large threatening mammals to beware. This deep toned foreboding cry now frightens most every mammal from visitors to big deer or innocent FedEx deliverymen.
Another endearing trait is his discovering, during his first Christmas season as part of the family, that rather than just whine at the door to go out he could take his huge paws and swipe at the long string of sleigh bells  that hung from the door handle, like a cat swipes at dangling string, and we would hear the loud clanging in any room and immediately take him outside. This started as a positive method for his daily “business” ,so we still have the sleigh bells hanging, but it has evolved into a practice so he can go outside to see what is going on, sniff around or just loiter on the lawn. He goes to the door, vigorously slaps with his large paw the bells, and turns his head to look for us with those big sad eyes which hide his real intent for going outside. His brother, Bart the Beagle, has also learned that when the bells ring he should stay close to Cole so he could also enjoy the outdoors. As intelligent that Bart is, and as adept he is using his paws to manipulate many food items from in the center of the kitchen island to within his Beagle mouth to snatch and devour, he still has not learned how to ring the bell. Since his body began growing, Cole’s awkwardness has taken on many dimensions one of which how he lays down to rest. He does not slowly lower his long legs or curl his front legs under his body but rather he just collapses into one big lump. Usually this is accompanied by what visitors think is something crashing on the floor with a great thud. He then sprawls his entire body out in complete relaxation n mode and instantly falls into a dreamy sleep. Anyone hearing this body collapse is startled and is much surprised upon discovering that it is merely Cole reclining to rest. When he is excited Cole will jump high like a bounding lion leaping after prey or a gazelle jumping onto our bed. He also will run like some cat on the African Plain with his front legs in unison stretching forward then being tucked so as to gain optimal speed. Cole does not curl up like most dogs often but will always use the opportunity to claim my chair or Becky’s couch if vacant. This is one of the rare times that he will tuck his legs underneath his body but as he insists on laying his head on the arm rest which gives the appearance of someone reclining on a sofa.
Cole has become much like my shadow around the house always following me from room to room even if that requires him rising and collapsing frequently. Often he will just come up to me, put his big hairy face in front of mine and begin to give me a big Cole kiss which involves vigorous licking of one’s face and head.  Cole has just become part of my life as I frequently find myself speaking to him and he always listens but maintains his puzzled look as if wishing deeper explanation of what I have just communicated. He is most endearing when he knows that it is time to eat and he patiently sits by his food dish with his large front paws and legs extended and his hind quarters resting on the ground. He sits about 4 feet tall in this position and appears like a good child waiting for candy. Cole loves all children in excess. When they arrive he greets them like a shipwrecked man would greet his rescuers with never-ending doggie hugs and kisses. Cole’s great enthusiasm for their arrival usually creates much havoc since his body just flies everywhere  knocking about kids, people, furniture and anything not anchored . It becomes a momentary “lumbering frenzy” of excitement. If I am gone for more than a few moments he treats me like I he has found a long lost companion and I must admit that I share his feelings of affection after a brief absence.
If reincarnation occurs then I am convinced that Tom Sawyer’s  best fictional childhood friend of adventures, Huck Finn, has returned in my dog Cole.

When Eggs with Truffles Arrive at Table

When Eggs with Truffles Arrive at Table
There exists a culinary tradition that has developed over the centuries to allow a dining participant the opportunity to receive the maximum enjoyment of this extraordinary peak experience. To participate fully and indulge in the world’s most intense sensory event one must follow time honed and perfected process. Every sense, at a heightened level, is continually involved in this, the ultimate culinary moment. The pace required must be extremely slow and exquisitely deliberate, almost to the point of motionlessness. One must be prepared to gracefully and consciously allow a harmonious flow of all the elements associated with consuming Truffled eggs.
One is to be seated in quiet anticipation. The aroma announces the pageant’s start as the fragrance  permeates the air while the treasure is carefully brought  to the table in a slow paced procession . The extreme muskiness that exudes from the plate, almost visible, as it engulfs one’s very being, in a fragrance like no other and the recipient is taken to a special sensory place reserved for the culinary gods. It is life, the earth, wholesomeness, nature’s purity, all in one scent that becomes  overwhelming and uniquely intoxicating.
As the plate is placed in front of the guest it is not just customary ,or required but like the earth’s magnetic pull, an inexplicable force draws one’s face close to the plate until almost coming in contact with the small culinary jewels of shaved truffles. One breaths deep, as if preparing to hold in the air before an underwater plunge, which is also analogous to breathing in the scent of a women’s fragrance on the first night when one fell in love. It becomes like a fog engulfing everything and becoming lost in the mist that hides all else from one’s view. One is devoted only to absorbing every delicate waft and drift of aroma. A great pause naturally occurs before the next symphonic movement.
Next the fork, ever so carefully, gently scoops, as if lifting a baby asleep so as not to disturb , a small portion with one truffle shaving or a few small pieces of treasure onto the fork.  Anticipating the elegance of this taste, one guides the fork into the slightly open mouth as if waiting for a kiss from one’s beloved , lips parted slightly, awaiting the delicate taste of bliss. As the fork is deliberately inserted  in the waiting opening, the lips close. As if experiencing the sense of taste the first time the entire body explodes in delight. After the utensil has been inserted it is slowly withdrawn between moist lips while a taste of purity intensifies in one’s mouth. Soft, perfectly cooked egg seems to melt upon the tongue along with the incredible taste of truffle. Like gelato eaten in Florence, on a warm Italian night, that is absorbed in one’s body, all of one’s being is infected with a sensory intensity that imparts a harmony with life. A long and lingering pause, for reflection and indulgence of what has transpired, is taken. Evoking a feeling of momentary ecstasy. Like lovers having just shared a moment of bliss the experience is savored. These steps are meticulously repeated in a slow, methodical manner until all has been consumed. Then a final gesture of reverence is observed as one lovingly traces a finger across the plate to gather all stray elements and one last touch upon the tongue is performed.

The Chef's Mom: Becky's Saturday Iron Chef Kitchen Battle

There is a unique bond and similarity between all chef’s mothers. They are most likely one of the major influences and early instructors of so many great chefs. Chef’s begin learning, what becomes their trade, at an early age and usually are encouraged to experiment, cook, create, and love the art of cooking. Once accomplished in the profession, their Mothers usually assume a prestigious role in the chef’s life and restaurant as a sort of elevated kitchen guru and honored visitor. Many times their Mom’s recipes from home become adopted as menu staples or inspirations for wonderful new dishes. Respect is bestowed upon these Mother’s as culinary teachers, which distinguishes this group of women, from most other mothers, as a role model in their son’s ( or daughter’s) career. Certainly Fathers, who are chefs or who do a lot cooking, have achieved this same distinction but that is not as well documented as this Mother and Son special bond.
Becky Sawyer, who is Chef Jonathon Sawyer’s Mother , has an additional and somewhat different role. Every Saturday, before leaving the house to go to The Greenhouse Tavern, she dons a chef jacket and wraps her hair under a bandana, checks to see that her set of personal knives are in the car and journey’s the restaurant. She is not going to advise the kitchen staff, critique new dishes or even cook along side the others chefs. She is going to create and to conduct a personal kitchen battle. This battle is not against any competitor but against her own standards and the pressure to produce a culinary delightful and unique meal for the staff of critical foodie experts. This activity was never planned but just began on a whim and grew into a much anticipated weekly feature. It is the Family Meal prepared entirely by the Chef’s Mom. It is like a made for TV extravaganza. The Chef’s Mom usually arrives between 1 and 2pm and must feed 15-25 people before the restaurant opens at 5. That requires the meal to be completely served by 4pm so that while eating the staff can review the specials and details of the menu and spirit offerings for the evenings dinner service. Usually there is no advance notice of what remnants need to be utilized or what is in surplus for this meal. Chef Sawyers’ Mom is armed for battle with her extensive experience, sharp knives, and a creative spirit. She arrives and survey’s what bits and pieces must be used and starts chopping while creating the meal in her head as she cuts and slices what is available. Further complicating the task is a vegan\vegetarian meal must also be prepared for those who do not eat meat. Rather than fearing or becoming annoyed, at the prospect of preparing, this usually 5 dish meal, she delights in the excitement of a culinary challenge. The other twist is that she must (a self imposed rule) make something completely different than the foods served in the restaurant. This is frequently accomplished by varying the cuisine from Indian to Asian. Mediterranean, Mexican, or some type of fusion. In 2- 3 hours she has prepared a meal that everyone looks forward to eating and these Family Meals have become a much anticipated weekly favorite in the culture of The Greenhouse Tavern. The dishes are never the same and by all reviews have achieved a cult status for excellence and diversity.
It has been written that one of the factors making award winning chef Jonathon Sawyer successful is his constant tinkering with and constant changes to his menu .He always produces classically inspired dishes with local ingredients that exceed expectations. Creativity is his hallmark and certainly it is clear that Mother and son share many of the same cooking skills and attributes as well as a love of culinary challenges.

Jake: At the Greatest Age

The Greatest Age for Boys: Jake, the oldest grandchild, at eleven

I have always said that my favorite age for boys is from 8 until sometime in the 12 - 13 year old range. This is a time when boys are really discovering themselves, their personalities are somewhat developed, a sense of humor is being refined, yet their childhood curiosity and affection is still very much present.
They are inquisitive, opinionated, and cute all at the same time. Life is full of discovery, fun, while they are experiencing the pure joy of living. Being with them allows a parent (or grandparent) to share the unspoiled happiness and wonderment of life. Although each child ( or grandchild) is exceptional in their own unique way there is always something special about the first. The oldest reaches life’s stages first, and is the natural leader of the pack that follows.
Jake is my oldest grandchild and he is in the “Greatest Age for a Boy”. It is a very special time for me. He has always been a terrific child and has brought an entirely new fulfillment to my life. One of the most wonderful times of my adult life was a two day trip that I took to Niagara Falls with Jake. We did all the tourist activities, took thousands of great photos, and just had the grandest of times being together. Two friends. It was one of those perfect moments in life that when they occur you wish to freeze in one’s memory so you can savor the feelings forever. We also had similar feelings and experiences of joy when we went to take photos of Cleveland and visit the Rock and Roll Hall of Fame for a “Special Day with Papa and Jake” gift that I was given for my birthday. It was the greatest gift that anyone could give me. One on one time, just being together( I did receive the same from his two brothers but those are chapters in their story’s).
Jake has been the most well behaved, serious, studious, yet so full of humor and wonderful curiosity and analysis of all the contradictions in life. He has always been able to make accurate and detailed observations about news, people, and ask probing questions concerning why and how things are the way they are. Many of these deep thoughts are unanswerable yet he will persist until satisfied. Typical “Jake” is a term that we use for his or anyone’s serious approach to life and how to examine the meaning of everything in order to point out the overlooked aspects or contradictions.
Since early childhood Jake has practiced following his parents rules and limits. I remember once when we were together and I offered him a piece of gum and he replied, as a matter of fact, “my Mom doesn’t let me chew gum (a chapter in Mom Michelle’s story)” and proceeded to explain why she didn’t allow gum chewing at that age. So “Jake” . I believe all ( Grace may be the exception) other grandchildren would jump at the chance to have gum or candy and some ( one for sure) would just say “sure, but don’t tell my Mom”.
We have always shared the humor of great commercials and silly claims by advertisers and this has been a continual topic that has brought us much delight. He doesn’t watch TV much but certainly remembers all the commercials and shares his great insights with me about each. The contradictions, untruths, and humor in life will always be shared between us. Typical of this is the previous post on this blog that Jake and I wrote about the new cell phone ban. We had a great time listing all of the things that should be outlawed.
Since he was small, Jake has been a very self demanding, perfectionist and very hard working person. Less than perfect equates to failure and he strives for perfectness in everything. This has made him very successful in the sports in which he participates. He out works and out thinks most other kids along with his natural talent. It is frustrating sometimes because he expects no errors and anything less disappoints him.
A typical Jake is currently occurring. Each person in his 6th grade class was to select a topic of their choice for a report and speech. Other children selected sports or Olympic heroes, sports teams, Presidents, etc. Jake chose “The Vietnam War” because he wanted to learn all about the war. So “Jake”.
Jake's guitar is his special personal activity and his special talent. He is so disciplined that he takes his ginormous dog, Jack, with him up to his room and will play his guitar for hours. His love of dogs, music, studies, and his family is one of things that make him so special.
Jake is the oldest of the cousins and every other cousin, brother and sister look up to him as the role model. He gladly accepts this role and is kind and most unselfish to each child in the family. Jake mixes with the youngest or the grandparents just as easily so he is in high demand at gatherings.
Jake recently was awarded the “Pride of North Royalton” as a role model student. This significant recognition was given by his teachers who chose the student in 6th grade best exemplifying the qualities of a role model. He also earned the “Bear” award for a 4.0 GPA which all have come to expect from him.
Jake wins the “Pride of my life” award from me.
All this and he is just simply a great kid, a true friend, and someone who shares so many interests with his Papa. It is the greatest age for Jake and the greatest time in my life.

Cell Phones

North Royalton follows other cities with brilliant cell phone while driving ban:
After the recent report about the man who caused an accident not because of talking on a cell phone but by eating chili while driving so I thought it best to have legislation introduced that will be sure to eliminate any doubts about what is legal and what is the law so we all can be 100% accident free. I have compiled an extensive list that should bring great clarity to this most difficult dilemma. Under my proposal it would be illegal to:
Eat chili while driving but hot dogs (no condiments since those could spill on pants causing great distractions)
Referring to paper maps but changing Garmon criteria would still be legal
Eating Soups of any kind but popcorn would certainly be legal
Putting on mascara yet allowing lipstick to be applied
Dining on Chinese except for egg rolls ( dipping sauce free), sticky rice and crab ragoon
Appling nail ( finger or toe) polish while allowing for
Tying ties would be illegal but straightening hats would be legal
Drinking hot chocolate ( because it is always scaldingly hot) but coffee permitted since hot temperatures are illegal after the great McDonalds lawsuit.
Chocolate candy that has reached 40 degrees or above ( begins to melt) except for M&Ms and Junior Mints
Allowing dogs to sit on drivers lap, or drive, but one hand head petting allowed as well as dog nose sticking out of passenger window not to exceed 4 ½ inches from car
Shaving except for battery operated razors that do not exceed the noise level ( refer to Horn Beeps)
Removing any clothing (jackets, pants…) except for sunglasses, hats, fake moustaches and toupees.
Putting on any clothing (jackets, pants…) except for sunglasses, hats, fake moustaches and toupees.
Playing of Monopoly, Sorry or Backgammon but bingo is always legal
Jelly filled doughnuts but all glazed varieties are acceptable
Clipping nails ( toes or fingers) while permitting one handed tissue free( see below) nose picking
Tissue use for anything but using fingers and forearms legal
Mooning while driving would be illegal but the bird is always permitted except in school zones
Gawking at beautiful women ( or men) walking but allowing non distracting smiles
Bubble blowing using any instruments but gum bubbles not exceeding 8.5 inch diameter is legal
Horn beeps lasting more than 1.5 seconds or voices raised above 80dB
We had been just using the inadequate current reckless driving laws but since we have begun the process of a specification of offenses, by banning cell phone use , we must be of low level intelligence and require detailed government laws to protect us from ourselves. The Chinese do this most successfully and we are determined to catch up to our communist brothers and sisters.

My Favorite Thigs

One of the great things about being a Grandfather is all of the opportunities that you have for those perfect life moments. Where you could live forever. A special place that hope to keep alive in your heart always. There are so many very simple joys that are perfect. Today while trying to cheer up a sick Catcher, as well as Louisiana,we did one of their favorite things which is to sing along (youtube) to the Sound of Music songs. It is Catcher's favorite (yes even above Star Wars). It was one of those perfect moments, although brief due to his being so tired but wonderfully cuddly. As we sang "A few of my favorite things" we started to discuss our favorite things, perfect moments in my life, so I decided to list just a few of them to the music and we had a great time singing my words to the tune. I want to publish my extensive list of Perfect Moments in a latter post but for now, here are words toh that great tune.

little girl poses boys hiking in Spring
these are a few of my favorite things

these are a few of my favorite things

Our Christmas Retreat 2009 : Memories, Scenes, Impressions

Arrival: After one of the most challenging six months of our lives we decided that it would be most beneficial to take a few days together on a brief get a way. Sometime, much after dark, in a vast blackness, deep in the forest, down long winding road and through a woods of pine, our Pilot’s headlights cast a shadow on a dim lit dwelling that was to be our cabin retreat. We left the car running with bright lights illuminating the scene. We saw in the distance from our parking spot a two story A Frame cabin, mostly hidden under tall pine trees whose arms sagged heavy from the weight of the snow. The side of the cabin, that we could see, was a layer of white snow. Everything glistened from the glare of out lights like a spotlight on a newly found treasure. Smoke drifted from the cabin’s chimney, Winter purity covered everything, low hanging pine boughs laden with heaps of fresh fallen snow, a roaring fire, tall trees sheltering the hidden dwelling, while inside Becky prepared a dinner on a pine table with plates of truffled pasta, anise marinated pork, celery root and carrot mash, Dancing Bull red Cabernet wine. Alone together with 40 years of memories in that secluded place. And so it beganb.

Morning one:
We awoke to light slowly illuminating a white covered world.
The sting of fresh morning chilled air assaulted our faces.
Like waking in a Currier and Ives Christmas card,
We strolled into morning’s white purity,
Beneath tree limbs extended,
Symbolizing all our hopes and dreams,
Each branch sheltering, protecting us,
Layers of white,
like a memories of joy,
Cleansing branches of all blemishes,
So only purity remained visible,.
On arms intertwined,
As far as we could see in white forests’ density.
